Low-fat Western Omelette
Preparation Time: 15 minutes
Ingredients:
- 2 eggs
- 1/4 cup chopped onions
- 1/3 cup chopped bell peppers
- 1/3 cup diced ham
- 1 oz shredded cheddar cheese
- Splash of milk
- Pinch of Salt & Pepper
Directions:
- Heat a non-stick skillet at medium heat
- Whisk 2 eggs into a bowl
- Add a splash of milk, salt & peper, onions, bell peppers & ham
- Cook till partially set, then top with cheddar cheese
- Fold over half of the omelette and cook for another minute
- Serve omelette warm with whole grain toast
For any even healthier option, use low-fat cheddar cheese and no ham.
